Here is a delicious cheese spread that you can make in a flash and get on you snack table in time for the big game or whatever the occasion! Kentucky style beer cheese is a regional favorite that combines, you guessed it! Beer and cheese, along with a few other spices and flavorizers to come together to make an excellent spread for crackers, typically, saltines, but we love it on butter crackers such as club or ritz, and it is also great served with carrot and celery sticks! This cheese will make any cheese lover happy!

You will want to start off with a lager style beer, mild is best, this is not the place for a micro brew, pale ale or IPA. You want an old fashioned lager or even a pilsner would work too! Think, whatever your grandad drank! Like Pabst Blue Ribbon, Hamm’s or the champagne of beers, Michelob. Open that beer up and pour it into a bowl or a measuring cup and allow it to go flat. This took only a couple hours for me, so do it the morning you want to mix your cheese and you should be fine.

I used 6 cups of shredded cheese. I used sharp cheddar, mild cheddar and a bit of gouda that I had left from the holidays. Along with the beer and the cheese, I added some onion and garlic powder, season salt and Worcestershire sauce to the mix. You can also add a healthy teaspoon of dry mustard powder to give this a kick. I also added a bit of cayenne pepper, but you could alternatively add a healthy bit of your favorite hot sauce to taste.

This could not be easier. I do recommend that you use either a heavy duty stand mixer like my Bosch or a standard size food processor to mix this up. If using the food processor, I also suggest using the plastic blade and not the metal one.

Add the cheese to the bowl along with the spices and Worcestershire sauce and mix it all up until it starts to resemble clay or play doh. Then add half the beer and mix, then add the remainder of the beer and blend until smooth. This should be spreadable, not loose or gloppy. It should not fall from the spoon or spatula easily and it should spread with a knife on crackers.

Once made it will be soft and ready to serve, however I recommend refrigerating this for at least a couple of hours and overnight is best to allow the flavors to meld completely. The beer flavor will come out and be quite prominent upon sitting. You will want to allow this to soften before serving if you have had it in the fridge to make it spreadable.

I love to serve this with homemade soft pretzel nuggets. That is areal treat and a video for another day.
