Taking a break from back to school preparations, I am going to share with you a re-do of sorts. Today I am sharing my copycat recipe for KFC coleslaw. This is usually our favorite slaw, both for it’s flavor and texture. I have developed a dressing that very closely mimics theirs and we could not be happier with it. I am fairly certain that if you are a fan of the KFC slaw, you will love this recipe that you can make at home!

We do not eat fast food often. Hardly ever, but when we want coleslaw fast for a quick meal, we grab a quart from the local KFC. However we just really like to make our own food at home so this is our go to slaw recipe. We love this on the side or on a pulled chicken or bbq pork sandwich or next to thin sliced bbq brisket or even on a turkey Ruben sandwich. No matter where you like slaw you are going to love this version.

Mine starts out like every other slaw on the planet, with green and red cabbage, the ratio is up to you. I have a small head of cabbage which ended up being about six cups when chopped. I used a quarter of a head of red cabbage and if you want to use less or leave it out altogether, go right ahead! I also added about 2 cups of baby carrots because that is what I had in the crisper drawer, but if you were going to use regular carrots, I would say four good sized ones ought to do the trick. These all went into the food processor to get chopped. The reason we love KFC slaw is because it is a chopped slaw and we think that makes all the difference.

The dressing is simple, but has a lot of ingredients. Mayo, milk, sour cream because I did not have buttermilk, lemon juice, white vinegar, sugar, grated onion and seasonings. I went very simple with some salt, pepper, onion powder and celery seed. This all gets mixed up well and poured over the vegetable mixture.

You will want to stir this well and it will seem as if all the dressing gets absorbed by the cabbage, but you need to put this in the fridge to hang out for at least a couple hours. This will help the vegetables release some of their liquid and blend with the dressing to make a nice juicy slaw.

This is perfect and delicious. If you like KFC coleslaw, you are going to love this version. I think the secret is both the added creamy sour cream or buttermilk and the grated onion. Grating the onion makes it almost invisible except for it’s intense delicious flavor. I believe that leaving out the onion would cause this slaw to fall flat.
