Greetings! Who doesn’t love a good carrot cake? Everyone in my family loves carrot cake. Full of wonderful ingredients like carrots (of course) raisins, coconut, walnuts and pineapple. Mine is a little different because it has a mashed banana in it for added moistness. This cake will blow the roof off of your holiday celebration, but is easy enough to make for a mid week pick me up for your family.
Celebrations don’t have to be huge. Celebrate the small things every day! Report cards, spring, milestone, or just because! Make those memories with your family and they will do it for theirs.
This carrot cake is easy to put together and even easier to eat! I topped mine with my cream cheese frosting and it was amazing!
