Mac and Cheese Soup is a bizarre dish I tried during my recent trip to Melbourne. A thick, rich and creamy soup featuring fried ham and macaroni pasta, this dish is definitely not for everyday consumption, but suitable for an occasional treat – give it a go!

INGREDIENT LIST:

3 Cups of Dry Macaroni Pasta (cooked as per packet directions)
70g of Butter
1/4 Cup of Plain Flour
1 Teaspoon of Mild Mustard (I used Dijon)
3 1/2 Cup of Liquid Chicken Stock
1 1/2 Cups of Milk
1 1/2 Cups of Whipping Cream
5 Cups of Grated Cheddar Cheese (or what ever cheese you prefer)
About 2 Cups of Diced Ham
Salt and Pepper
Preparation Time: About 10 minutes
Cooking Time: About 20 minutes
SERVES 6 (or more, depending on serving size)
All measurements and temperatures are in Australian Metric.
