Moroccan Couscous

 

This delicious yet easy to make Moroccan Couscous is a perfect side dish!

Ingredients for four portions:

Couscous 400 grams
Raisins 400 grams
Pine nuts 100 grams
Butter 100 grams
Sea salt to taste
One lemon’s zest
Coriander to taste
Cumin to taste

Brown raisins, pine nuts and couscous to golden-brown color in mix of olive oil and butter. Put ingredients to small cooking pot and fill it with water or broth. Leave the pot for 7-10 minutes, then stir. Serve the dish with a piece of butter.

Note
This couscous perfectly goes together with poultry dishes. As an option you can add some mint, spinach or pine nuts.
