Moroccan Delight (Couscous recipe)

Ingredients:
1 box Near East brand plain cous cous
1 can (I prefer Del Monte) stewed tomatoes
juice & zest from 1 lemon
2 T. fresh minced parsley
4 cloves crushed garlic
3 c. baby spinach leaves
*optional 1/4 – 1/2 lb. baby shrimp
Prepare couscous as directed on box, omitting butter & salt.
Cover spinach leaves in a glass bowl and steam for approx. 4 minutes, drain
Combine all ingredients and serve warm, or refrigerate and serve cool a few hours later.
