My friend Diane from Today’s Modern Family Website texted me and asked if I had a recipe/video for caramel corn. I have not done that and since it sounded like she wanted to make this for New Year’s Eve, I thought I had better get on it!
Here is my version of old fashioned molasses caramel corn. This tastes like the Cracker Jack’s from my youth and I love them. If you prefer a lighter caramel corn, like Fiddle Faddle or Crunch and Munch, then sub out the molasses for light corn syrup. Then you will end up with a lighter caramel with a lighter more buttery flavor.
This is a little different preparation from most caramel corn recipes you will find. I have used a paper bag and the microwave as well as cooked my caramel much longer than most call for. This may take longer on the front end, but on the back end it saves you energy and it also save an hour in the oven stirring every 15 minutes! I love this method and I can whip up a very large batch of caramel corn in a short time!
