Greetings! I had some of the herbed, lemon garlic orzo pasta leftover from supper and decided that it would make a really nice salad for lunch the next day.
Adding some fresh veggies of your choice and I put in a handful of crumbled Feta cheese along with some more parsley and dill and a bit more lemon juice, and olive oil but you can skip the extra oil if you prefer.This was a fabulous salad! Bright and refreshing and the perfect way to makeover a leftover.
I personally love to be able to used leftovers without reheating them because then they don’t get that funky taste of being leftover. Do you know what I mean? You could easily add in some cubed chicken or steak to make this a full meal as well. Served on a bed of shredded romaine lettuce and that would be awesome!
Alternative serving suggestions would be to stuff this into a warm pita, or even turn this into a filling for a lettuce wrap! No matter what you choose, you are going to love this delicious pasta salad!
