I LOVED Peter Rabbit as a kid and he’s a super popular kids party theme so these Pumpkin Spice Cheesecake bites are the PERFECT Petit Fours to add a sweet, bite sized vegetable garden treat with real hidden veggies inside!
Here’s the recipe:
250g white chocolate tinted orange OR orange candy melts (but the white chocolate tastes better!)
Note: only use oil, candy or powder colours to tint your chocolate
1/2 cup packed light brown sugar
1/2 cup boiling water
8 ounces cream cheese, at room temperature
1 1/2 cups boiled, pureed fresh pumpkin OR canned unsweetened pumpkin puree
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
Pinch of ground nutmeg
21/2 cups heavy cream
A little green food colouring
