Salmorejo – Spanish chilled tomato soup

Tomatoes, bread, olive oil and garlic are pureed into a wonderfully fresh soup, which you chill in the fridge before serving for best results. The soup is then served with a sprinkling of chopped ham and chopped hard boiled egg. This recipe makes a spectacular summer starter or light lunch when paired with a salad.
