I hooked up with Nick Weston and his boys from Hunter Gather Cook to make the ultimate venison spit roast. We slow Cooked an 18 month old Fallow Prickett, which was hunted in it’s prime and is the most sustainable wild meat that you can get in the UK.
We basted and injected this baby with rendered beef fat and created our own foraged rub for the ultimate flavour.Nick and his boys spent four days planning and making their own water wheel spit, and using the power of the river we slow cooked that beast for 5 hours over a live fire.
