“Strawberry-Filled Cupcakes”
Jamie has a yummy summer dessert idea that makes use of a seasonal fruit: strawberries! She’s showing both how to make cupcakes with strawberry filling (from scratch!), as well as how to make a shortcake biscuit if you want to make strawberry shortcake. Supplies:
Cupcake Tin & Liners
Bowl & Whisk
Spoon & Paring Knife
Solid & Liquid Measuring Tools
Oven Mitts
Ingredients:
For Cake Batter:
2 cups all-purpose flour
1.5 cups sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup butter
4 eggs
1 cup milk
2 teaspoons vanilla extract
For Strawberry Filling
1 cup diced strawberries
1/4 cup sugar
1/2 lemon (for the juice)
Package Unflavored Gelatin OR 1 tablespoon cornstarch and 1/4 cup water
Pinch of Salt, to taste
For Frosting:
2 Cups Powdered Sugar
1/2 Cup Butter
1 Tablespoon Milk
1 Teaspoon Vanilla Extract
For Biscuits:
1.5 Cups Flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract
Steps:
Step 1: Prep Workstation
Step 2: Make Batter
Step 3: Bake Batter (350 degrees, 18-25 minutes)
Step 4: Make Strawberry Filling
Step 5: Make Frosting
Step 6: Insert Frosting into Cupcake
Step 7: Frost Cupcake
