Stuffed triangles – quick recipe

Look at these lovely stuffed triangles: it’s a great idea for an appetizer or an appetizing snack, and they can be either sweet or savoury. Let’s see how to do! We’ll need:
For the pastry
• 2 ½ cups (300 g) of flour
• 1 ½ sticks (175 g) of butter
• 1 cup (250 g) of cow’s milk ricotta
• 1 egg For the savoury filling
• 3,5 oz (100 g) of gruyere / 3,5 oz (100 g) of gammon (or ham)
• 2 pears / 3,5 oz (100 g) of taleggio (or fontina) cheese
For the sweet filling
• jam to taste
• chocolate-hazelnut spread to taste
Place the flour and the ricotta cheese on a work surface, then add the butter… and knead into a ball.
This is a neutral-tasting dough, so you can fill it with sweet or savoury ingredients. Now wrap in cling film… and let it rest in the fridge for half an hour.
Meanwhile, move on to the filling: let’s start with the savoury stuff. Peel, core and dice the pears… now cut the gammon into strips… then cut the cheese into cubes… and roughly grate the gruyere.
Roll out the dough on a floured work surface to a 1/10 inch (2 mm) thickness; now, with a pastry cutter, cut into squares, about 4 inches (10 cm) on a side.
Transfer the squares to a baking dish, lined with parchment paper, now… fill with pears… and taleggio cheese… then with… gammon… and some gruyere.
Beat the egg in a small bowl… now… brush the edges of the square… and fold over into triangles… seal… and brush the surface, too… then bake at 350°F (180°C) for 20-25 minutes.
While the savoury triangles are baking, move on to the sweet ones: fill them with jam, I’m using cherry jam but you can choose what you prefer… and chocolate-hazelnut spread. Now you just have to brush as before, fold into triangles and bake at 350°F (180°C) for 20-25 minutes.
Our stuffed triangles are ready, serve hot… good, easy and quick!
