Greetings! We are planning a family movie night and so we are having a quick and easy finger food dinner. Irish Nachos, which some of you will happily call chili cheese fries, are inspired by one of our many trips to Busch Gardens Williamsburg. We go there several times a year and are pass holders. A luxury to be certain, but one I am not willing to give up just yet because it truly is my very favorite place to be with my family. We have made many happy memories as a family there.

These nachos are similar to some that they serve at Busch Gardens. Now to give you an idea if you have never been to Busch Gardens in Williamsburg, Virginia it used to be called Busch Gardens Europe and before that Busch Gardens The Old Country. It is a celebration of European Customs and Traditions mixed in with great rides, food and shows. The park is divided into countries that include England, Ireland, Scotland, Italy, Germany, France and New France or Canada. The village of Ireland is where you can find these Irish Nachos.

Homemade, thick cut potato chips or crisps are topped with a slow cooked chili that has been simmered with Guinness beer and then topped again with cheese sauce, shredded cheddar cheese and optional diced onions and jalapenos. They are delicious! And Expensive, but when you go to such a place, you expect to pay for the treats. I will say that the portion was very large and five people enjoyed that snack so overall, I suppose it wasn’t that bad.

To make our version of these Irish nachos, we decided to use waffle fries and cook them till they were nice and crisp. We opened up a jar of Rick’s home canned chili and added about a half cup of dark beer. In this case we used what we had in the beer fridge which was Yueng Ling Black and Tan, a regional favorite. We simmered the chili to cook out the alcohol and heated up some nacho cheese sauce. Built our nachos in pasta bowls and had a lovely meal. In hindsight, we would have also topped these with chopped onions, shredded cheddar, jalapenos and bacon bits. Why not go all out if you are only having these occasionally?

That is how we made our version of Busch Gardens Williamsburg’s Irish Nachos.
