SWEET ONION SAUERKRAUT RECIPE!! HOT DOG TOPPING OR SIDE DISH!!

This sweet onion sauerkraut is perfect for topping off a German style kraut dog, a NYC dirty water dog or even just enjoying as a side dish to your hot dog, sausage or bratwurst or other “wurst”. The sweet onion cooked until it golden really adds a different level of flavor to the kraut, which is enhanced even further by sauteing with the onion. I promise, if you are not a sauerkraut lover, this might just change your mind!

Today we begin the first full week of June. In many parts of the country summer vacation is officially underway for lots of school children. That means barbecue and back yard party season! That also means hot dogs! Did you know that July is officially national hot dog month? That July 19th is officially national hot dog day? With that in mind I thought it would be fun to add to our “Hot Dogs of Summer” playlist and go full speed on the summer hot dog train!

Hot dogs are a staple for many families. Whether it is for a meal, a barbecue or something to always have on hand for hungry little monsters type of food. The older you get the more you learn. Like hot dogs are an institution in some parts of the world. That in some places you don’t dare call them hot dogs, but “weiners”. That not all dogs are created equal and then there is the whole “snap or no snap” debate. No matter where you fall, kraut will inevitably enter into the conversation.

This sweet onion sauerkraut is the perfect topping for my soon to be shared German style kraut dogs. A part of our Hot Dogs of Summer playlist which you can find here;

I am making a small amount today. Probably enough to top 8 dogs generously. You can make as much or as little as you like. Leftovers are easily reheated and keep in the fridge for about three weeks. I am using sweet Vidalia onion. One large onion sliced thin and tossed in a hot pan with about two tablespoons of butter. I like to let these sit and caramelize for about five minutes tossing every now and then. My end goal here is to have all the onions tender, some with nice brown caramel on them and some just beyond their translucent stage.

When the onions are just right I add in about two cups of good quality sauerkraut. Don’t rinse it! I keep my kraut in the fridge in an airtight container. When I remove it from the container I like to use tongs. This helps me to squeeze out any residual juice before I toss it into the pan with the onions. Now you can throw in your spices. I am using celery seed, dried thyme, salt, pepper, onion powder and garlic powder. Some people prefer to use caraway seed. Since that is not a favorite of mine, I sub out celery seed. You should do what you prefer.

Now that all the ingredients are in the pan, give everything a good toss. Keeping it over the heat until everything is good and sizzly warm. You can keep cooking until it is a bit dry if you like. Sometimes I like to get a bit of brown on the kraut as well. It’s all up to you here.

Now you are done. You can use this as a side dish with some fried potatoes and sausages. Top your hot dogs or use it to cook a pork roast in the crock pot! I think sauerkraut is one of those love it or hate it foods. I grew up eating it so I love it, but I also think it doesn’t get as much respect as it deserves. Not to mention the health benefits of eating it! Great for your health and your gut flora and it can be consumed even if you are on a low carb diet!
