Thanksgiving Turkey Leftovers? Make This Turkey Enchilada Casserole

 

This is the perfect dish to make with your leftover turkey or even chicken as it is a nice change of pace for dinner.

Ingredients:
left over turkey or chicken, already cooked and shredded
10 corn tortillas
12 oz of green enchilada sauce, I used Trader Joe’s Verde Salsa
4 oz. green chiles, chopped
1 1/2 of shredded cheese, I used 1/2 mild cheddar and 1/2 monterey jack cheese
vegetable oil for cooking the tortillas

Preheat oven to 350 degrees F.
Spray a 9 x 9 baking dish with pam spray

Heat a small frying pan over medium high heat and add about 1 inch of oil. When hot, dip two tortillas at a time with tongs into the oil for about 3 to 5 seconds. Place tortillas on a tray to cool.

Cook about 10 tortillas and let them cool.

It is best to have your turkey or chicken heated up before assembling the casserole.

First place about 1/3 cup of verde sauce in the bottom of the dish. Then place a layer of the softened corn tortillas on the bottom. Then layer with turkey, green chiles and cheese.

Repeat layers until the baking dish is full. On the last layer end with sauce and then cheese.

Bake in the oven for 25 minutes or until casserole is heated through and cheese is completely melted.

Garnish with sour cream, guacamole, salsa, etc.
