Tagine is a North African dish that usually contains meat. But my tagine recipe is vegan, healthy, and contains no oil. It is bursting with vegetables and chickpeas simmered in a spicy sauce. Spice mix:
1 t cumin
1 t coriander
1/2 t red pepper flakes (more or less, depending how spicy you want it)
1/2 t tumeric
1/2 t cinnamon
1/2 t black pepper
Veggies:
1 cup shallots, minced fine
4 cloves garlic, minced or pressed
2 medium sized tomatoes, chopped
2 T tomato paste
1 courgette (zucchini), cut into cubes
1 aubergine (eggplant), cut into cubes
1 red pepper, diced
1 tin chickpeas, rinsed and drained
Juice and zest from half a lemon
1/4 raisins
3 T Chopped cilantro/coriander
3 T Chopped mint
3 T Chopped parsley
2 Cups vegetable broth
Directions:
Stir fry your shallots and garlic in a dry pan. When they start sticking and browning, add a bit of water to unstick them from the pan. Keep doing this until your shallots are golden brown. Add your chopped tomatoes and fry them until the tomatoes lose most of their moisture. Add a bit of coconut sugar to sweeten up your tomatoes if necessary (Dutch tomatoes need sweetening!). Then add your vegetable broth, tomato paste, chopped veggies and spices. Cover and let simmer until your veggies are cooked through.
Then add the chickpeas, lemon and zest and raisins and simmer for a few minutes longer. The sauce should have thickened by now. If the sauce is very watery, keep simmering. Lastly, add your chopped herbs and serve the tagine over couscous.
