Recipe: Dominican Republic
Individual Pastelóns
4 yellow plantains
4 tablespoons butter
kosher salt
dash of nutmeg
½ cup COLD water
2 cups shredded roasted chicken or turkey
2-3 Tablespoons vegetable oil
4 cloves of garlic, chopped
½ medium onion chopped
½ red bell pepper, chopped
handful of pimento stuffed green olives, diced
2 cups frozen mixed vegetables
½ cup tomato sauce
Sazon/Adobo seasoning to taste
Kosher salt and Pepper
½ cup cilantro, chopped
Squeeze of fresh lemon juice (optional)
2 cups shredded sharp cheddar cheese
Cooking spray
4 ramekins (4.5 inch diameter)
To prepare the plantains:
1. Peel plantains and slice into quarters. Bring pot of water to a boil; add plantains and a teaspoon of salt and boil lightly until very tender (about 15 minutes, or until plantains become tender, bright yellow and sink to the bottom of the pot).
2. Drain and place hot plantains into a mixer. Add butter and nutmeg and beat on low speed until blended. Add about ½ cup cold water, helps it to not stick/harden as much] and continue beating on low speed until light and fluffier. Set aside.
To prepare the Sofrito/Pastelón
1. Preheat oven to 375.
2. Heat oil over medium heat. Add garlic, onion and red pepper and sautee a few minutes. Add olives, continue cooking until all are lightly brown. Add mixed vegetables, meat and tomato sauce. Cook a couple minutes until blended.
3. Season with sazon, salt and pepper. Remove from heat. Add cilantro and if desired, a squeeze of lemon.
4. Spray individual ramekins with cooking spray. Layer about ¾ inch of plantains in the bottom of each, then a layer of cheddar cheese. Then add a layer of the sofrito/meat mixture (divide evenly among the 4 dishes). Then add another layer of plantains to each, and top with remaining cheddar cheese.
5. Place ramekins on rimmed baking sheet and bake at 375 degrees for about 15 minutes, or until cheese is melted and bubbly.
Morir Soñando (“To Die While Dreaming”)
2 cups orange juice (freshly squeezed works best)
2 cups ice
1 (12 ounce) can evaporated milk
¼- ½ cup sugar to taste
TK cup Whiskey
Orange to garnish
Place all ingredients in a blender and mix for about 1 minute until it becomes thick and creamy. Serve in chilled cups, garnish with sliced orange garnish. You can either blend or stir to blend.
